Roasted Sweet Potatoes with Honey & Cinnamon



Sweet potatoes are a popular food in many parts of the world. They are a good source of fiber, potassium, vitamins, and other essential nutrients.Sweet potatoes grow from something called “slips”. Those are the green vines that grow out of a sweet potato when it sprouts. They're taken off and planted in the ground to create a new sweet potato plant. Sweet potatoes grow best where the air temperature remains very warm, from 75° to 95°F throughout the growing season. Sweet potatoes are best started indoors as early as 12 weeks before they are placed in the garden. Sweet potatoes require from 100 to 150 days to reach harvest. There are a number of different ways to prepare potatoes, among them baked, mashed, roasted or grilled.


Shopping list
  • 4 sweet potatoes
  • Extra virgin olive oil
  • Honey
  • Ground cinnamon
  • Salt and pepper

Kitchen equipment needed
  • Cutting board
  • Chef knife
  • Roasting tray


Roasted sweet potatoes with honey and cinnamon

4 sweet potatoes, peeled and cut into 1-inch cubes

¼ cup of extra virgin olive oil, plus more to drizzle potatoes after cooking.

¼ cup of honey

2 teaspoons of ground cinnamon

Salt and freshly ground black pepper.


Instructions

1. Preheat oven to 375 degrees

2. Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over the potatoes. Roast for 25 to 30 minutes in the oven or until tender.

3. Take sweet potatoes out of the oven and transfer them to a serving platter. Drizzle with more extra-virgin olive oil.
