Spicy Chicken Wings



Serrano is a type of hot pepper that grows in the spring and summer where temperatures get around 75 degrees and will be ready to harvest in about 3 months. Serrano peppers can be used in sauces, or chilis and can also be fried, blanched, and grilled, peppers also work well on chicken wings. It’s nice to have some sort of hot sauce on your chicken wings for a bit of heat if you like it. For this recipe it will be cooked in a slow cooker.

Shopping List:
  • 3 pounds chicken wings
  • all-purpose flour
  • peach preserves
  • chicken broth
  • white vinegar
  • soy sauce
  • 2 to 3 serrano peppers
  • shallots
  • garlic clove
  • salt
  • Minced chives, optional


Kitchen Equipment Needed:
  • A chef's knife
  • A cutting board
  • A bowl
  • A slow cooker
  • Plastic bags
  • Cooking spray


Ingredients

3 pounds chicken wings

1 cup all-purpose flour

2 cups peach preserves

1/4 cup chicken broth

1/4 cup white vinegar

1 tablespoon soy sauce

2 to 3 serrano peppers, finely chopped

2 shallots, finely chopped

1 garlic clove, minced

1/2 teaspoon salt

Minced chives, ranch dip, optional


Instructions

1. Using a sharp knife, cut through the two chicken wing joints; remove and discard wing tips.

2. Place remaining wing pieces in a large resealable plastic bag. Add flour; seal and shake to coat.

3. Transfer chicken to a 4- or 5-qt. slow cooker coated with cooking spray.

4. In a medium bowl, combine remaining ingredients; pour over chicken.

5. Cook, covered, on low until chicken juices run clear, 4-5 hours.

6. If desired, top with chives and serve with ranch dip.
