Southern Sweet Potato Casserole

 

A sweet potato is a large tuberous root from the bindweed, or morning glory, family. The most common sweet potato variety is native to  tropical regions of the Americas. The sweet potato grows at an average temperature of 75 degrees and normally takes 4 months, around 90 days, and is sensitive to frost and drought. The plant should be harvested after the ends of the vines begin to turn yellow or before the start of the frost. With it's beautiful flowers and delicious roots, sweet potatoes are a great addition to the garden. 


Shopping list:

2 ½ pounds of sweet potatoes

Stick of butter

White sugar

Light Brown sugar

Eggs

At least a half pint of Milk

Cinnamon 

Mini- Marshmallows



Kitchen equipment Needed:

Cutting board

A large sharp knife

A 9x13” casserole dish

An oven (that can fit the dish) and stove (that the pot fits on) 

Large pot

Something to mash the Potatoes (Hand mixer, Masher, or even a fork if you are patient)

Bowl

Whisk


Southern Sweet Potato Casserole

Ingredients:

2 ½ pounds of sweet potatoes

¼ cup of melted butter

¼ cup white sugar

¼ cup light brown sugar

2 eggs

½ cup of milk

½ teaspoon of cinnamon

2 cup Mini Marshmallow


Instructions:

  1. Start by peeling the sweet potatoes and slicing them into approx. half inch cubes to allow quicker cooking. Add the potatoes to the pot and cover with room temperature water, do not use hot water, and boil the potatoes. You will know the potatoes are done when a toothpick or similar object can easily pierce the potato or when the potatoes are soft. 

  2. Next Drain the potatoes and transfer to a bowl and begin mashing. You want to mash the potatoes until there are no more large chunks and the potatoes are mostly smooth.

  3. Now we are going to add our Sugar (Brown and white), Eggs, Milk, and Cinnamon and mix until everything is combined.

  4. Then we preheat the oven to 350 degrees while we finish the casserole. First we want to oil or butter the dish and then we will add our sweet potato mixture and lightly tap on the table to even out the top. Finally we will add the mini marshmallows, they will flatten out quite a bit so be sure to evenly spread them over the top.

  5. Once the oven is ready add the casserole dish and bake for about 30 minutes or until the marshmallows are golden brown. 

  6. Allow to cool slightly before serving, makes approximately 8 servings
